During a May 8, 2024 inspection, the parlor was given a one-star rating due to inadequate hygienic food handling and management of food safety. Hatem Coskun, the owner, admitted to the issues and took steps to rectify them, including deep cleaning and repairing the sink area. On July 1, 2024, City of Lincoln Council revisited Maisie Moo and was delighted to award the parlor a five-star rating, the highest possible score. Coskun expressed his satisfaction, stating that they had learned from the experience. Despite the delayed update on the Food Standards Agency website, Coskun displayed official documentation and a five-star sticker from the city council. He emphasized the importance of the new rating for their loyal customers, demonstrating their commitment to hygiene and food safety. Coskun added, “We’re thrilled with the perfect rating we’ve achieved. We’ve improved our processes and are confident in providing a safe and high-quality experience for our customers.”

The owner of an ice cream parlour in Lincoln city centre is celebrating after seeing his business soar back from a low hygiene rating of ‘one’ back to the maximum score of ‘five’.

Maisie Moo on Saltergate was inspected by City of Lincoln Council on May 8, 2024 and given a ‘one’ star rating. That inspection found that improvement was required in ‘hygienic food handling’ and major improvement in the ‘management of food safety’.

Owner Hatem Coskun, who also runs Jenny’s Cafe next door, previously spoke to us openly about that rating, showing us a report from the council and saying it was his own fault about the issues, but that the food itself was “all fine”.

After learning lessons from the experience, and fixing issues including a repair behind the sink and a deep clean, he said he was confident and ready for the next inspection.

City of Lincoln Council visited the premises again on July 1, 2024 and the much-improved outcome delighted the business owner.

Although the rating has yet to change on the Food Standards Agency’s website, Hatem showed us documentation and the new ‘five’ star rating sticker, which were both signed and dated by the city council.

Reacting to the rating, owner Hatem Coskun told us: “It’s perfect. It should have been like this last time, but we learnt our lesson and we have improved how we work.

“We are happy our great customers can see we are doing better.”
